At the centre of this narrative is Mélanie Serre, one of France’s most compelling culinary voices. Raised among the wild landscapes of Ardèche before refining her craft everywhere from Eden Rock in Saint-Barth to Joël Robuchon in Monaco, Serre has developed a cuisine that refuses easy categorisation. French technique provides the foundation, while New York contributes its appetite, confidence and unapologetic generosity.

The interiors unfold like an elaborate fiction. Conceived by celebrated designer Tristan Auer and imagined through the surreal visual universe of artist Clovis Retif, Temple & Chapon feels less like a restaurant than the apartment of an elusive collector who has spent decades travelling without ever revealing his final destination. Objects become souvenirs stripped of geography. Fabrics suggest forgotten continents. Every room hints at stories that remain tantalisingly unfinished, while the hypnotic compositions of Philip Glass quietly suspend time.
Then comes the American Bar, where Experimental returns to the cocktail culture that shaped its identity. Paying homage to legendary New York institutions such as Please Don’t Tell, Attaboy and Raines Law Room, the menu revisits iconic signatures including the cult Benton’s Old Fashioned alongside contemporary creations like the Quetzal, accompanied by a thoughtful selection of Californian and Oregon wines.
Temple & Chapon never attempts to imitate New York. Instead, it captures something far more elusive: its attitude. The confidence. The appetite. The beautiful contradiction of elegance without stiffness, indulgence without excess.
