
This fall, the iconic PUR’ restaurant at Park Hyatt Paris-Vendôme emerges from a captivating transformation, blending the visionary designs of artist-architect Hugo Toro with the culinary brilliance of Michelin-starred Chef Jean-François Rouquette. The collaboration marks a new chapter for the esteemed dining venue, where art and gastronomy converge in a luxurious Parisian setting.
A meeting of minds
Two enfants terribles of hospitality come together to create PUR’; the newly redesigned restaurant at Park Hyatt Paris-Vendôme is the result of a meeting of minds known as pioneers in their fields.
A Michelin-starred chef with an inventive approach to classic cuisine, Jean-François Rouquette has been the master of
PUR’ since 2006. He recently embarked on a mission to create a restaurant that would reflect his passion and ethos, and
it was an encounter with artist and architect Hugo Toro that helped make his dream come true: “It was an immediate and obvious connection,” they say.
A multifaceted artist, Hugo Toro studied at the Penninghen School of Interior Design, the University of Applied Arts in Vienna, and UCLA in Los Angeles. Among his numerous artistic projects is a new decor for the Villa Albertine in New York, in collaboration with the Mobilier National; the launch of his first collection of art furniture, and an upcoming exhibition of paintings at the Embassy of Mexico and the Mexican Cultural Institute in Paris.
This multi-generational collaboration gives a new spirit to the restaurant, which was boldly redesigned like a private residence.

to the patina of the chairs, the canvas paintings depicting Bacchus, right down to the style of uniforms, he has crafted an
ideal restaurant, in perfect harmony with my cuisine and identity. It evokes the spirit of a contemporary inn, guided by
comfort, where the art of hospitality is cultivated at the heart of a 5-star palace.”

Dining at the Chef’s Residence
PUR’ is the new, exclusive dining destination in Place Vendôme.
Piece by piece, Hugo Toro crafted the new global identity of the restaurant, imagined as a private residence and inspired by the ensemble designers of the 1930s, whose custom-made creation spanned several creative fields.
“The Chef’s personality naturally inspired the idea of rooting his cuisine and character in the ambiance of a unique contemporary residence, with decor imbued with craftsmanship and art,” recounts Hugo Toro. “A place where the distribution of spaces and the flow of movement would allow him to interact continually with his audience, and host as if at home.”

In a setting where every detail has been created to leave a lasting impression, the Chef reveals the essence of his cuisine
inspired by the terroir, nature, seasons, and encounters.
PUR’s signature dishes return within a backdrop created by Hugo Toro that includes
newly-designed tableware, with a raw, earthy aesthetic that complements the gastronomic offering. Jean-François Rouquette’s food expresses a richness of ingredients, with special emphasis on methods that include slow or quick cooking, fermentation and decoction. It’s a cuisine that reinvents the classics, highlights local artisanal excellences,
celebrates the power of flowers and the art of delicacy and emotion.
Through his cuisine, Jean-François Rouquette aims to never alter his ingredients and to preserve their raw truth. Dining
